Baking: Homemade Rice Krispies Treats

Homemade Rice Krispies Treats. Probably one of life's simplest pleasures. However, definitely not one of the simplest baking experiment. Let's just say that things get sticky fast.

Homemade Rice Krispies Treats (adapted from the recipe on the Kellog's Rice Krispies box)
Ingredients:
1 10 oz bag of marshmallows
3 tbsp butter
6 cups of Rice Krispies cereal

Makes ~2 dozen treats

The igredients


Recipe:
1. Melt the butter over a large nonstick saucepan on medium heat.
2. Place marshmallows in pan. Wait until they become a uniform pile of marshmallow goop.
Thank goodness for nonstick pans.


  • The recipe on the cereal box calls for low heat application throughout the recipe. If I had done that, it would have taken probably 20+ minutes for the marshmallows to become gooey. Because I'm impatient, I turned up the heat, and it didn't seem to be problematic. I probably wouldn't set it higher than medium heat though for fear of burning the marshmallows. 
  • When the individual marshmallows start to lose their form, I began mushing and mixing them with a large wooden spoon. 
3. Add in the Rice Krispies, one cup at a time. After every 2 cups, I would mix the rice krispies and the marshmallows with two wooden spoons, Coldstone style. Mix until the rice krispies density is relatively uniform. I added about 1 cup of rice krispies more because I felt with just 6 cups it was still too sticky. 

Getting to this step involves a mini biceps and deltoids workout.
4. Set a large piece of parchment paper on a flat surface. Transfer rice krispies pile onto the parchment paper. 

And here, my friends, is a trick for how to get nice flat rice krispies treats. 

5. Place another piece of parchment paper on top of the rice krispies mixture. Using a large baking pan, apply pressure on the upper piece of paper to flatten your very large rice krispies treat. 

Set the mixture onto parchment paper. (Looks like popcorn, doesn't it? That's from the weird lighting.)
Drape the rice krispies with a second piece of parchment paper.
Use a baking pan to flatten your paper-rice krispies-paper sandwich.
Voila! One honking flat Rice Krispies treat.
6. Let the monster of a Rice Krispies treat cool for about 10-15 minutes.

7. Cut the Rice Krispies into squares that are a size of your choosing. This part is a bit messy too. Even after the rice krispies have cooled, the marshmallows stick all over the knife.
